Delicious healthy guacamole recipe

It's May... Spring - Fiesta - Cinco De Mayo!....   Avacados are incredibly healthy for you and you can make an awesome guacamole without using any fattening sour cream, or other ingredients that just aren't necessary for an extremely FRESH guac with outstanding FLAVOR!!!  This is simple, easy, and a staple for any southwestern summer get together.

Spring - Fiesta - Cinco De Mayo!....   Avocados are incredibly healthy for you and you can make awesome guacamole without using any fattening sour cream, or other ingredients that just aren't necessary for an extremely FRESH guac with outstanding FLAVOR!!!  This is simple, easy, and a staple for any southwestern summer get together.

 Simple ingredients with favorable portions are the key to GREAT guacamole... 

Experiment with your own portions of onion, choice of chiles, amount of cilantro and lime... salt/pepper.  Before you know it you will have your own favorite HEALTHY guac recipe on the table!

 

  Simple Guacamole

 
What you'll need:
2  -  ripe avocados
1/2 tsp  -  kosher salt
1 tbsp  -  fresh lime juice
2 tbsp  -  minced red onion 
1  -  jalapeno pepper minced (stems and seeds removed)
2 tbsp  -  fresh chopped cilantro
1/2 tsp  -  fresh cracked black pepper
1/2  -  ripe tomato chopped  (seeds removed)
 
Directions:
1.  Cut the avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl. (I find it easiest to score the inside of the avocado with a blunt knife and scoop out the flesh with a spoon.

2.   Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.) Sprinkle with salt and lime juice. The acid in the lime juice not only adds great flavor but will help delay the avocados from turning brown. Add the chopped onion, cilantro, black pepper, and chiles.
TIP:   Add the tomatoes just before serving the guacamole as refrigerated temperatures hurt the flavor of the tomatoes (there is a science there that I won't get into here)
3.   Mix well with a spoon and serve...   ENJOY!
