Simple ingredients with favorable portions is the key to a GREAT guacamole...
Experiment with your own portions of onion, choice of chiles, amount of cilantro and lime... salt / pepper. Before you know it you will have your own favorite HEALTHY guac recipe on the table!
What you'll need:
2 - ripe avocados
1/2 tsp - kosher salt
1/2 lime - freshly squeezed
1/4 cup - minced red onion
1 - jalapeño pepper minced (stems and seeds removed)
1/4 cup - fresh chopped cilantro
1/2 tsp - fresh cracked black pepper
1 - ripe roma tomato chopped (seeds removed)
Directions:
1. Cut the avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl. (I find it easiest to score the inside of the avocado with a blunt knife and scoop out the flesh with a spoon).
2. Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.) While mashing the avocados add the salt and lime juice. The acid in the lime juice not only adds great flavor, but will help delay the avocados from turning brown.
TIP: For more heat, use a Serrano pepper instead of the jalapeño
3. Fold in the chopped onion, cilantro, black pepper, and chiles. Mix well with a spoon and serve... ENJOY!
Healthy dipping suggestions: As an alternative to chips, serve veggie sticks for dipping such as celery, carrots, etc.
